Culinary Regions
While the overarching cuisine is often categorized under “Mediterranean”, we can consolidate the regional cuisines of Türkiye under five main sub-categories:
- Aegean Coast: Known for its seafood, olive oil based dishes, use of fresh vegetables, herbs, artichokes and figs, with a mix of Ottoman palace cuisine. Homeland of the “meze” culture.
- Anatolian Flatlands: Known for the hearty grain-based dishes, gözleme, mantı (Turkish dumplings) and cured meats. Home of the 2500 year old wheat-based dish “keşkek”.
- Anatolian Highlands: Distinguished by meat and dairy products, hearty stews and kadayıf desserts. Heavy reliance on animal produce.
- Mesopotamian: Running from the Eastern coasts of the Mediterranean well inland to the Tigris river and beyond, this region is famous for its rich, spicy dishes, extensive use of bulgur and red pepper, desserts like baklava.
- Black Sea Coast: Renowned for its anchovies (hamsi), pide, various herbs and lentil based dishes, enriched by Circassian cuisine. Home of the Turkish tea.

Local Vineyards & Ancient Traditions
We have developed very unique itineraries with an almost academic approach, compiling the best of the most ancient vineyards of Anatolia. Our route samples from among 55 producers, many of which are in Bozcaada.
We hit vineyards in different regions that produce some of the most renowned wine from endemic and local grapes, while also soaking in the culture and history.
Wine from Endemic Grapes
White wine:
- Emir: Grown in Central Anatolia & Cappadocia, this grape is a refreshing and easy to drink, greenish-yellow variety, suitable for producing dry, primeur and sparkling wines.
- Narince: Endemic to the sandy soil of Tokat region, produces a fruity, greenish-yellow dry table wine with a balanced structure.
- Sultana (Sultaniye): A seedless grape from the Aegean region, produces a very fruity, light and fresh wine that needs to be consumed within a year and cannot be aged.
- Misket: Very aromatic and fruity wine commonly found in Izmir, suitable as both dry and sweet wines. Cousin of Muscat, but adequately different.
- Vasilaki: Grown mostly on Bozcaada, early harvest of this sour and grassy grape produces a dry, fresh, citrusy and light colored white wine.
Red Wine:
- Boğazkere: One of the best grapes grown in Türkiye, it is endemic to Southeast Anatolia (upper Mesopotamia) that produces a strong bodied, high tannin wine perfect for aging. Usually blended with Öküzgözü.
- Öküzgözü: Literally meaning “ox eye”, this ancient grape is grown in Elazığ, and is well known to produce a soft-textured medium body red wine.
- Kalecik Karası: Endemic to Central Anatolia, specifically Ankara, this grape produces a medium-bodied fruity wine that is suitable for aging.
- Adakarası: Literally meaning “the black of the island”, this grape endemic to the Avsa Island in Marmara Sea produces a medium bodied, peachy, fruity and elegant red wine.
